Spice Rub: 1/3 teaspoon freshly ground black pepper 1/4 teaspoon cayenne pepper 2 teaspoons chile powder 2 1/2 teaspoons ground cumin l teaspoon dried oregano 2 teaspoons paprika l/3 teaspoon freshly ground white pepper 3 teaspoons granulated garlic 2 teaspoons granulated onion 6 teaspoons light brown sugar 4 boneless, skinless chicken breasts Barbecue Sauce: 1/2 cup chile sauce 2 tablespoons prepared Dijon mustard 2 tablespoons soy sauce l tablespoon hot pepper sauce (such as Tabasco) 6 tablespoons light brown sugar juice of 1/2 freshly squeezed lemon 3 tablespoons minced onions l tablespoon minced garlic 1/2 teaspoon freshly ground white pepper Prepare the grill. Thoroughly mix together all the spice rub ingredients in a mixing bowl and set aside. Combine all the barbecue sauce ingredients in a small saucepan and, stirring occasionally, cook over medium heat for 5 to 10 minutes, until the flavors are thoroughly blended. Rub the chicken breasts thoroughly with the spice rub. Transfer to the hot grill and cook for 5 minutes. Turn the chicken breasts over and cook for 5 minutes longer. Brush the chicken with the barbecue sauce and continue grilling for 5 minutes, or until cooked through. Remove the chicken from the grill and let sit for a few minutes before serving. Questions?
