Oven Baked Chicken Kiev

This is an impressive and delicious main dish for company.
   
Ingredients  
6 tablespoons butter, softened
3 tablespoons minced fresh parsley
1/2 teaspooon garlic salt
6 boneless, skinless chicken breast halves
2 tablespoons vegetable oil
l cup finely crushed cracker crumbs
1/2 teaspoon Lawry's seasoned salt
1/2 cup evaporated milk

 

Directions  
  1. Combine butter, parsley and garlic salt; mix well, and shape into a stick (like butter). 
  2. Cover and freeze about 30 minutes or until firm.
  3. Place each chicken breast half on a sheet of waxed paper; flatten chicken to 1/4 inch thickness, using a meat mallet or rolling pin. Cut butter mixture into 6 portions; place a piece in center of each chicken breast.  Fold long sides of chicken over butter; fold ends over, and secure with wooden toothpicks (use round toothpicks, not flat). 
  4. Spread oil in a 9 x 13 baking dish and set aside. 
  5. Combine cracker crumbs and seasoned salt in a flat bowl.  Place milk in another bowl.  Dip each chicken piece into milk, and coat with cracker crumbs.  Place chicken, seam side up, in prepared baking dish.
  6. Bake at 400 degrees for 20 minutes;  carefully turn each piece.  Bake an additional 20 minutes, or until brown and cooked through. 
  7. Place chicken on heated platter and garnish with parsley, if desired.
