Parmesan Chicken Breasts

This is a quick and easy main dish, suitable for family or entertaining. Very tasty. A side dish and vegetable or salad would round out your meal.

l egg

1/2 cup milk

3/4 cup grated Parmesan cheese

1/4 cup all-purpose flour

dash salt

dash pepper

l teaspoon paprika

4 medium skinless, boneless chicken breast halves

1/4 cup melted butter

In a shallow bowl, beat egg; whisk in milk. In another shallow bowl, stir together Parmesan cheese, flour, paprika, salt and pepper. Rinse the chicken; pat dry. Grease a 9 x 13 baking pan or dish. Dip chicken in the egg mixture; dip in the cheese mixture, coating evenly. Arrange chicken in baking pan so that pieces don't touch. Drizzle the butter evenly over chicken pieces. Bake in a 350 oven for 30-40 minutes, until chicken is tender and edges begin to brown slightly. Don't turn chicken during baking.
