This is one of my husband's favorites. I love the crunchy topping on the chicken. This recipe is simple to prepare, but delicious enough for company.

Ingredients

l slightly beaten egg

dash milk

1/3 cup all-purpose flour

l cup pecans, finely ground

2 tablespoons sesame seed

l teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 cup melted butter or margarine

4 large boneless, skinless chicken breasts

1/2 cup chopped pecans

In a shallow dish, combine egg and a small amount of milk. In another shallow dish, stir together flour, ground pecans, sesame seed, paprika, salt and pepper. Pour melted butter in another shallow dish.

Rinse and pat dry chicken. Dip chicken breasts into egg mixture; then into flour-pecan mixture; then into melted butter. Place chicken in a lightly greased baking pan. Sprinkle chopped pecans over chicken. You may pour a slight amount of extra melted butter over chicken breasts at this time.

Bake in a 375 degree oven for approx. 30 to 40 minutes, or until chicken is tender and coating is a golden brown. Spoon pecans on bottom of baking dish onto chicken.
