Pumpkin Bars

Thanksgiving would not be complete at my house without this tasty treat. I love the cream cheese frosting over the moist cake. Watch these disappear!

4 Eggs

2 Cups Sugar

l Cup Vegetable Oil

16 Ounce Solid Pack Pumpkin

2 Cups Flour

2 Teaspoons Cinnamon

l Teaspoon Baking Soda

3/4 Teaspoon Salt

1/2 Teaspoon Ginger

1/4 Teaspoon Cloves

1/2 Teaspoon Nutmeg

Heat oven to 350. Beat together eggs, sugar, oil and pumpkin. Stir in remaining ingredients. Pour in greased and floured 11 x 15 pan. Bake until light brown, or 25-30 minutes.

FROSTING

3 Ounce Package Softened Cream Cheese

6 Tablespoons Softened Butter or Margarine

l Teaspoon Vanilla

2 Cups Powdered Sugar

Small Amount of Milk

Cream butter, vanilla and cream cheese together. Gradually beat in powdered sugar. Add few drops of milk if frosting is too stiff. Spread on cooled cake, cut into squares and serve.
